Cooking with Kayla – Burrito Style

Another taste of yum!

By Makayla Hansen, Assistant newspaper editor October 13, 2014 School year 2014/15

Who else is just tired of store-bought, nasty and tasteless burritos? I AM! I want something to satisfy my burrito craving that doesn’t make me want to scream, kick, and cry my eyes out! So, to save this world and my fellow DaVincians from tasteless and gross burritos, I went “shopping” online and found the perfect recipe. So grab your seats and run to the kitchen (we won’t need to run to the bathroom for these non store-bought burritos) and let’s GET COOKIN’, GOOD-LOOKIN’!

Here is what we need for our burritos (even the name sounds delicious):

  • 1 med. onion chopped
  • 1 bunch cilantro chopped
  • 16 oz. Monterey Jack cheese grated
  • 12 6-inch corn tortillas (flour is okay, but corn tastes much better)
  • 2 skinless chicken breasts
  • 1 can of refried beans
  • Whatever you want to cook the chicken in (spices)
  • Vegetable oil
  • Fixins’ for the Mini Burritos (salsa, sour cream, etc.)

Are ya ready kids? Aye aye captain! Ohhhhh, here are the steps to our recipe: (Praise if you sung that like SpongeBob)

  • Fully cook the chicken however you want.
  • While the chicken is cooking, prep your ingredients.
  • Fry the tortillas in oil until golden brown on each side.
  • Fully cook the onions in the same skillet.
  • Put the refried beans in a pan and heat on medium till ready, stirring occasionally.
  • Pull the chicken apart with your hands until fully shredded (this part is fun).
  • Make yourself a nice prep station.
  • Layer cheese, chicken, beans, onions, and cilantro, making sure you can still tightly roll the tortilla. Leave enough cheese to sprinkle on top.
  • Bake at 400°F for 10 mins. or until cheese is nice and brown. Serve ’em up and enjoy!

This serves a total of 4 people and it only takes 45 minutes. It is that simple, ladies and gentlemen. I can’t wait to see you again! Thanks for cooking with Kayla.
